Ingredients

  • A bunch of fresh asparagus spears about 200g, trimmed
  • 100 g prosciutto slices
  • 1 baguette sliced into 1-inch rounds
  • 2 tablespoons olive oil
  • 1 garlic clove crushed (for rubbing)
  • Grated Parmesan optional
  • Salt and pepper to taste

Instructions

  • Crispy Baguette: Preheat your oven to 200°C (400°F). Brush the baguette slices with olive oil, and toast them until golden. Rub the warm slices with the crushed garlic clove for that extra kick.
  • Asparagus Prep: Blanch the asparagus spears in boiling water for about 2 minutes. Then, plunge them into cold water to stop the cooking process. Slice into pieces that fit the baguette slices.
  • Wrap it Up: Wrap each asparagus piece with a slice of prosciutto.
  • Crostini Assembly: Top each baguette slice with the wrapped asparagus and sprinkle with a bit of grated Parmesan if desired.

Tips & Tricks:
Snap off the woody ends of asparagus instead of cutting them. They naturally break where the tender part starts!
Feel free to add a smear of soft cheese on the baguette before adding the asparagus for extra creaminess.
If prosciutto isn't your thing, smoked salmon works wonders too.
