- 4 large artichokes
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley chopped
- 3 cloves garlic minced
- 1/4 cup extra-virgin olive oil
- Zest and juice of 1 lemon
- Salt and freshly ground black pepper to taste
Prepare & Preheat:
Preheat your oven to 375°F (190°C).
Trim the tops and stems of the artichokes, and remove any tough outer leaves.
Use a spoon to gently remove the choke (the fuzzy part) from the centre of each artichoke.
Mix & Stuff:
In a bowl, combine the breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, extra-virgin olive oil, lemon zest, lemon juice, salt, and freshly ground black pepper.
Gently separate the leaves of each artichoke and stuff the breadcrumb mixture between the leaves.
Bake & Brown:
Place the stuffed artichokes in a baking dish with a splash of water in the bottom to prevent sticking.
Cover the baking dish with aluminium foil and bake in the preheated oven for about 45-50 minutes, or until the artichoke leaves are tender.
Remove the foil and bake for an additional 10-15 minutes, or until the tops are golden brown.
