Imagine plump artichokes filled with a mouth-watering mixture of breadcrumbs, herbs, and cheese, then baked to golden perfection. It's a dish that's as captivating as a journey into the heart of Mediterranean flavours.

Ingredients
  

  • 4 large artichokes
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 3 cloves garlic minced
  • 1/4 cup extra-virgin olive oil
  • Zest and juice of 1 lemon
  • Salt and freshly ground black pepper to taste

Instructions
 

Prepare & Preheat:

  • Preheat your oven to 375°F (190°C).
  • Trim the tops and stems of the artichokes, and remove any tough outer leaves.
  • Use a spoon to gently remove the choke (the fuzzy part) from the centre of each artichoke.

Mix & Stuff:

  • In a bowl, combine the breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, extra-virgin olive oil, lemon zest, lemon juice, salt, and freshly ground black pepper.
  • Gently separate the leaves of each artichoke and stuff the breadcrumb mixture between the leaves.

Bake & Brown:

  • Place the stuffed artichokes in a baking dish with a splash of water in the bottom to prevent sticking.
  • Cover the baking dish with aluminium foil and bake in the preheated oven for about 45-50 minutes, or until the artichoke leaves are tender.
  • Remove the foil and bake for an additional 10-15 minutes, or until the tops are golden brown.

Serve & Enjoy:

  • Remove the Baked Stuffed Artichokes from the oven and let them cool slightly before serving.
  • Serve the artichokes as an appetizer or a side dish
