Ingredients
  

For the Lemon Garlic Sauce:

  • Zest and juice of 1 lemon
  • 3 cloves garlic minced
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

For the Pasta:

  • 8 oz linguine
  • 12 large shrimp peeled and deveined
  • 2 tablespoons butter
  • Fresh parsley chopped, for garnish
  • Lemon wedges for serving

Instructions
 

For the Pasta:

  • Cook the linguine in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  • In a skillet, melt butter over medium heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.

For the Lemon Garlic Sauce:

  • In the same skillet, sauté minced garlic until fragrant, about 1 minute.
  • Add lemon zest and juice to the skillet, followed by extra-virgin olive oil.
  • Season the sauce with salt and freshly ground black pepper.

To Assemble:

  • Toss the cooked linguine in the lemon garlic sauce, adding reserved pasta water as needed for desired consistency.
  • Gently stir in the cooked shrimp, coating them with the flavourful sauce.
  • Cook for a minute or two until everything is heated through.
  • Serve the Lemon Garlic Shrimp Linguine with a sprinkle of chopped parsley and lemon wedges on the side.
